John Goddard's Waterside Guide is a good introduction to the main fishing flies and has colour illustrations of the flies and guidance on what fishing flies to use.
The more mainstream entomology books are less penetrable and get into details of insect genitalia and the like for identifying obscure sub-species.
I would also recommend An Angler's Entomology by J R Harris, which tells you a lot about the insects, beyond just identifying them. It is a good read but is a little dated now. It is only illustrated in black & white and uses some of the older names for flies.
